Chorizo & Chilli Falafel Chip Tortilla

Method

Preheat the oven to 180°C.

Heat a heavy based medium size fry pan over medium heat, add 1 tbsp of the olive oil. With the heat on medium-low, add the onion and gently fry until soft without colouring, add the chorizo and cook until the onion and the chorizo begin to colour (around 5 mins), remove from the pan and set aside on a plate lined with paper towel.

Meanwhile, place the eggs in a large mixing bowl and lightly whisk. Crush “The Wholesome Food Company Fabulous Falafel Chips – Chilli” and add to the eggs, leave to soften for around 5 mins. Add the onion and chorizo mix and the cheddar cheese.

Wipe out the pan, increase the heat and return the pan to the heat, allow the pan to get quite hot. Pour the mix into the pan, reduce the heat back to medium and cook for 3 mins or until the tortilla is beginning to set around the sides.

Place into the oven for approximately 10 mins or until just set. Remove and allow to cool for at least 10 mins before turning out on to a wooden board.

Crush the saffron threads and stir through the mayonnaise with a good squeeze of lemon. Spread the mayonnaise over the tortilla, scatter the parsley leaves over the top and serve.

  • 8 eggs
  • 50g grated cheddar cheese
  • 2 tbsp good quality store bought mayonnaise
  • 1 pinch saffron threads
  • ½ lemon
  • 3 sprigs parsley, leaves picked
  • Dressed salad leaves to serve (optional)
